Sesame Chicken Pasta Salad

2 c cooked pasta
3 c cooked chicken breast
2 c chopped lettuce
1/2 c sliced green onion
1/4 c minced fresh parsley

Dressing
1/4 c soy sauce
1/3 c white vinegar or cider vinegar
2 TBSP canola oil
2 TBSP sugar
2 TBSP toasted sesame seeds
1/2 tsp salt
1/4 tsp pepper

Toss the first 5 ingredients together. Mix the dressing ingredients together, then pour over the salad.

Enjoy!!

Tried and True Tuesday

I am not one who likes chocolate cake, but this one I love!! It is very easy to make, and very easy to devour in no time *wink*! Enjoy!

Texas Sheet Cake

2 c. flour
2 c. sugar
Mix together and set aside.

1 stick oleo
1/2 c. crisco
4 Tbsp. cocoa
1 c. water
Add above 4 ingredients in a saucepan and bring to a boil.

Then pour over the flour/sugar mixture and mix well

then add:
1/2 c. buttermilk
2 eggs
1 tsp.baking soda

Mix well. Pour mixture into a large cookie sheet (I use the Pampered Chef Lg Bar Pan) and bake at 400 degrees for 15 minutes.

Frosting
1 stick oleo
4 Tbsp. cocoa
6 Tbsp. milk
Add ingredients in a saucepan and bring to a boil. Remove from heat.

Then add:
1 lb. powdered sugar
1 tsp. vanilla
Add to saucepan. Beat mixture until smooth.

Optional: Add 1 cup chopped nuts. Pour mixture over warm cake, I usually let the
cake cool a good 15 minutes before I make the frosting, then pour it over the cake.

You can never go wrong with banana bread. Whenever I make it, its usually gone within a day. I just made a loaf yesterday afternoon, and there is probably just enough left for me to get a slice or two. I need to learn to make 2 loaves!

Banana Bread

1 3/4 flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 c shortening
2/3 c sugar
2 eggs, well beaten
1 c mashed bananas (I usually mash up 3 bananas)

Sift flour, baking powder, soda and salt together, set aside. Work shortening with spoon until fluffy and creamy, then gradually add the sugar. Add eggs and beat well. Slowly add the flour mixture alternately with the bananas, beating after each addition. Pour into greased 9 x 5 x 3 inch loaf pan. Bake at 350 for one hour or until knife comes out clean.

If you want to make muffins follow above, but bake for 20-25 minutes.

If you have a mini loaf pan, bake 35-45 mins.

Tried and True Tuesday

I am going to start off with my Cherry Cheese Danish Coffee Cake. Its a Pampered Chef recipe, and so easy to make.

Cherry Cheese Danish Coffee Cake

2 pkg cresent rolls
1 8 oz cream cheese, softened
1/4 powdered sugar
1 egg
1/2 tsp vanilla
1 (21 oz) can cherry pie filling

Glaze
1/2 cup powdered sugar
2 - 3 tsp milk

Preheat 350. Unroll cresent dough into triangles, arrange in circle on stone, wide ends on outside. Seal edges.

Filling - mix cream cheese, powdered sugar, egg, vanilla; mix until smooth. Spread mixture over dough top with filling.

Bake 25-30 min. or until brown. Cool slightly, drizzle with powdered sugar mixture.
