Okay the moss stitch: You start your first two rows with knit stitches, the pearl one, knit one for the rest of the row. The next two rows you start with the purl stitch, then knit one and purl one for the rest of the row. It makes a neat checkered like stitch. The rib stitch is actually similar in that you alternate the knit and purl stitches, but depending on how wide your want your rib you could alternate 4 knits 2 purls as opposed to knit one purl one.
