Tried and True Tuesday
My friend Jen has started a new meme, called Tried and True Tuesday. Stop on by her blog and join in on the fun!
You can never go wrong with banana bread. Whenever I make it, its usually gone within a day. I just made a loaf yesterday afternoon, and there is probably just enough left for me to get a slice or two. I need to learn to make 2 loaves!
Banana Bread
1 3/4 flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 c shortening
2/3 c sugar
2 eggs, well beaten
1 c mashed bananas (I usually mash up 3 bananas)
Sift flour, baking powder, soda and salt together, set aside. Work shortening with spoon until fluffy and creamy, then gradually add the sugar. Add eggs and beat well. Slowly add the flour mixture alternately with the bananas, beating after each addition. Pour into greased 9 x 5 x 3 inch loaf pan. Bake at 350 for one hour or until knife comes out clean.
If you want to make muffins follow above, but bake for 20-25 minutes.
If you have a mini loaf pan, bake 35-45 mins.

Maggie eats all the bananas in our house now before I can do anything else with them! Hahahaha… Sounds like classic, yummy bread – thanks
