Friday ~ watch kids, school runs and then get the rest of the baseball stuff.

Saturday ~ opening day/kick off for baseball, pictures, a game at noon and then a wedding at 6.

Sunday ~ church, quick lunch then off to my brothers for my nieces 2nd birthday.

Tasty Thursday

Trista over at The Pumpkin Patch has started a Tasty Thursday meme that I think is a great idea! I am in such a rut and in need of some new recipes to try out. You can read more about this here. So join in on the fun and post your favorite tried and true recipes!

Fast Family Fajitas

1 med green bell pepper
1 med red bell pepper
4 boneless, skinless chicken breast halves (4 oz ea)
2 tsp veg. oil, divided
1 garlic clove, pressed
1 envelope (1 oz) Lipton Recipe Secrets Onion Soup Mix
1/2 cup water
1/2 cup salsa
12 (7-8 in) flour tortilla, warmed

1. Cut peppers into 1/2 in strips. Cut chicken crosswise into thin strips.

2. Heat stir fry skillet over med high heat. Add 1 tsp oil and chicken, stir fry 3-4 minutes, or until chicken is no longer pink. Remove from skillet, set aside. Add remaining oil, peppers and garlic, stir fry for 1-2 minutes, or until veggies are crisp-tender.

3. Add chicken, onion soup mix, water and salsa to the pepper mix. Cook and stir 2-3 min, or until heated through.

4. Serve with tortilla and rice.

I do this with beef as well, about 1-2 pounds (I double the recipe if doing 2#’s)

What a week!

Well indeed I had an abcessed tooth. But for the life of the dentist he couldn’t figure out how it abcessed, as it was a dead tooth. But boy oh boy, the drainage that came out… YUCK!

When I went to the Dr on Sunday, they took my temp and the nurse said “Wow you have a fever”… news to me, I never knew it, wasn’t hot/cold at all. I got an injection of 1000mg of Rocephin in my butt. When they said they would do this, I said is it really necessary for that? I so didn’t want a shot. He looked at me and said “Dear, you are one sick gal”.

It has been a week and I am finally able to blow my nose. It hurt so bad to even try. It is still a little tender, but at least I can do it. I have to go back to the dentist in a week for them to complete the work on the tooth, they packed the hole they drilled with some medicine and capped it off.

I should have taken Tuesday off as well, as I was so drained. I was in bed early every night this week.

Taking a break this week

I have some sort of infection going on in my mouth/head. The Dr thinks its an absecessed tooth, but there is no tooth pain. So I am off to see the dentist sometime today. Got to do something, as I hate all the swelling in my face!

This week starts off with a yummy dinner for Easter, and the kick off of a very busy month, well season for us. Our youngest has started Cross Country and has practice 3 times a week with meets on Tuesdays. He also starts baseball this week, with a few practices, the offical kick off is the the last Saturday of this month. I forsee meals at the ball park in the future.

Sunday ~ ham, mashed taters/gravy, green bean casserole, rolls and a strawberry jello cream pie

Monday ~ spaghetti, garlic bread

Tuesday ~ hamburgs, fries and peaches

Wednesday ~ left overs - spaghetti or ham and scalloped taters

Thursday ~ pizza

Friday ~ We will be going out to dinner for my birthday, and going away for the weekend to celebrate. My hubby has gotten a room here at The Shack
